I made this!

I Love Pinterest!  The craft challenged side of me is in heaven.  I can borrow ideas from other pinners and pin my own.  I have tried a few.  I have them pictured here.  If I like them I'll say so.  If they didn't work out I'll say that too.

Pretzel kisses

These were so good!  I made these for Valentine's Day 2011.  The recipe I found from pinterest used hershey kisses and M&Ms.  Christopher told me they were too chocolatey.  I agreed.  They were good but with so much chocolate you could only eat a few.  With a snack like this you don't want any limitations ;-)


My next attempt at this I used rolos instead of kisses.  Did you know they make mini rolos?! I LOVE caramel and rolos are one of my favorite candies.  That certainly did the trick.  I didn't even get a picture of them, they didn't last long enough!
The candy combinations are endless and can be changed around to fit any holiday or occasion. And since M&Ms come in all colors and flavors, not to mention Reeses Pieces... well I don't have to spell it out.

I made this years ago.  I don't remember where I got the idea but I was in a phase. I had my mother's old sewing machine and I was sewing together everything and anything.  I made so many poorly made quilts as proof!


                            

We just moved and are getting around to boxes that haven't been unpacked for 5 years and 3 moves.  (It's like a treasure hunt!)
I use this one with a scrap of pretty pink ribbon.  I use it daily.

I found this recipe for this Salty Caramel Pretzel Bark on Pinterest.  Looked and sounded so yummy I had to pin it and try it.  And so I did.   The recipe called for pretzel thins but all I had were pretzel sticks (they are better for dipping in hummus or nutella!), so I improvised.



First you melt the butter, brown sugar and honey into a caramel.  Pour over your pretzels which are arranged on an aluminum foil lined baking pan.  Bake in the oven at 350 degrees for about 6 min.  Sprinkle with chocolate chips, I used dark chocolate pieces, and melt.  Sprinkle with sea salt and cool.  Harden in the freezer for an hour before breaking apart.
They were good, ok really.  I expected a lot more out of these.  The kids enjoyed them.  They are still enjoying them because I still have plenty left over.  I haven't had one since I tried them out on Saturday after I made them.  THAT says A LOT!
So I may make these again.  For the kids.  I keep them in the fridge so that they don't melt and get sticky/messy.

This is a recipe  is an adaptation of a Rachel Ray recipe.  I didn't do the adapting.




These were really easy to make, no more work then whipping up a batch of rice krispie treats.  The flavor was pretty good, if not a little too sweet.  Again the kids liked them.  Problem?  They didn't stay together very well at all.  Very messy to eat.  I tried them a few times, cooking the sauce more thinking it would hold the oats together better.  I didn't work.
But have no fear! It tastes great over vanilla yogurt!
I'll be making this again, but as granola, not bars.

This is another one of my pinterest recipes.  They are oatmeal cup cakes that I made for the kids' lunches.  To get this recipe you can follow me on pinterest. 

Its was very simple.  I made some changes.  I used vanilla almond milk instead of regular milk and added a little bit more sweetener to the mix.  I also added the coconut and mini chocolate chips to the mix, as well as sprinkling some coconut on top. This was trial and error.  My first tray had the toppings on top only.  After a taste test it was decided that the oatmeal needed to be a bit sweeter and the toppings needed to be mixed in.  
The kids liked these.  I used them in their lunches for the first week of school and I have some in the freezer for later too.

  Nutella Cookies


Yet another pinterest recipe. !  Really simple!  Egg, flour and nutella. These were a HIT!  The original recipe called for sugar as well but with the sweetness of nutella it isn't necessary.   I sprinkled a little raw sugar on top before baking.  
For my second batch I made a substitution.  In place of the egg I used one mashed banana.  HEAVEN!  
These didn't last long at all.  The kids had a few in their lunch the day after I made them and that was it.  Even the baby liked them!

You could substitute other fruits, like apple sauce or pumpkin, for the egg.  Can't wait to make my next batch.

After the first week of school we realized that getting a good breakfast into the 2 older boys before they have to leave the house at 7:30 was a challenge.  I wanted to make some quick breakfasts ahead of time to simplify and speed things up.  I decided to make these!


 





Mini frittatas! or omelets.  Whichever name you want to call them.  I have seen numerous pins on Pinterest for frittatas and mini omelets.  Even our local news channel featured one version on their morning show.  The web is full of recipes too.  I'm not much of a recipe follower.  I tend to scan the recipe, or watch something be made, and then just "wing" it on my own (not with baking though!)

I make frittatas, hash brown casseroles and the like for weekend breakfasts on occasion.  So I just went from there. I used the veggies I had on hand in the fridge.  

Here's all it took:

I simply diced one peeled potato, very small and sauteed it in a pan in a bit of olive oil.  I then added some chopped onion and green peppers. Last I added some tomato and ham.  You could fry up some sausage or bacon or use veggie crumbles.  I then added about a spoon full of the mixture in each greased muffin cup.  Next I put some egg whites (carton) and 2 whole eggs in a blender.  Added a bit of milk, shredded cheese and seasonings.  I blended the egg mixture and poured into the muffin cups.  I baked at 350* for about 10 min.  I let them cool in the pan before removing then put in a freezer bag for freezing.  

Breakfast for the week!
